What it tastes like.
A single block of old vine chardonnay located in a very cool location at West Cape Howeβs βLangton Vineyardβ was earmarked as the fruit source to make the base wine for the Blanc de Blancs. Picked early with high natural acidity, the base wine was fermented dry in stainless steel, fined and dispatched to Yalumba in South Australia for its secondary fermentation. The result is pure, light and very clean. The Burlesque Blanc de Blancs is pale straw in colour with a bright green hue and fine mousse. It exhibits clean aromas of fresh and preserved citrus. A surprisingly textural wine, it has a fine persistent bead and a creamy mouthfeel. Citrus flavours dominate the palate with a refreshingly dry finish. This wine is a perfect aperitif style, or can be enjoyed glass after glass...!
