The domain has nearly 12 hectares of Petit Chablis, classified as such because the limestone tends to be the younger Portlandian rather than the older Kimmeridgian, and as such typically occupies higher sites (Portlandian overlies Kimmeridgian) and has less clay. Pierrick is convinced that his largest parcel of Petit really ought to be classed as Chablis; it makes wine like Chablis and indeed is surrounded by AOC Chablis vines.
The nose is fresh and vibrant, with aromas of lime, crisp green apple, and a hint of subtle herbs that immediately evoke the purity and freshness of the Chablis terroir.
On the palate, the wine offers a zesty burst of pear and citrus, complemented by layers of minerality, with distinct notes of oyster shell and wet stone that reflect the limestone-rich soils of the vineyard.
The finish is clean, crisp, and refreshing, driven by the wine's vibrant acidity, with a lasting impression of minerality and precision that speaks to the wine's exceptional terroir.
