After years at Taillevent, Bordelet returned to the farm in the Sarthe-Mayenne region where high-stem apple and pear trees had grown for generations. He applies biodynamic methods and uses slow, natural fermentation with indigenous yeasts. The poiré expressions — Poire Granit (granite-soil parcels), Poire Authentique (sweeter style) — showcase the complexity of old-variety pear fruit. The Pomme Perlant is a light, dry apple cider, and Nouvelle Vague is an experimental release. Bottlings carry minimal dosage and no added sulphites.
