What it tastes like.

Eric Bordelet Sidre Nouvelle Vague — a single-occasion 330ml cider from Eric Bordelet's orchards in Charchigné (Mayenne), Normandy. Bordelet is the reference producer for French cider and perry, having trained as a sommelier and worked at L'Arpege in Paris before returning to the family farm.

Bordelet farms more than 20 heritage cider apple varieties on schist and granite soils, hand-harvests, and ferments slowly with native yeasts. Nouvelle Vague is the more energetic end of the lineup — bone-dry, higher alcohol and brisk, in a small-format bottle.

Ripe apple, quince, lemon zest, blossom and a touch of yeast lift. The palate is taut, dry and finely textured, with bright acidity and a clean, mineral close. A natural aperitif or a wine-style cider for charcuterie and Norman cheeses. 6.5% ABV, 330ml.

Éric Bordelet is a former Paris sommelier who left the Arpège restaurant in 1992 to take over Château de Hauteville in Sainte-Suzanne, Mayenne, western France. He produces Poiré and Cidre from old orchards using natural yeast fermentation and minimal additions. His Poiré Granit and Poiré Authentique are widely cited in trade circles as benchmark sparkling pear expressions for the style globally.
