100% estate Cabernet Sauvignon sourced from three distinct Elderton vineyards: old vines at Nuriootpa on the Barossa Valley floor, mid-altitude fruit from Greenock, and higher elevation parcels from Craneford in the Eden Valley — each site ripening at different rates and contributing complementary layers to the blend. Fermented in a combination of open-top concrete and closed fermenters with cap management, then pressed to a selection of older French oak hogsheads and puncheons for 18-24 months maturation including malolactic fermentation. Deep ruby-crimson with a classic Barossa Cabernet nose of salted black licorice, cedar, cassis and dark chocolate with a hint of dried sage and eucalyptus. The palate is full-bodied and densely structured with blackberry and blueberry fruit, firm pepper accents and gripping tannins that find real finesse on the long finish.
