Saumur's tuffeau rock provides ideal naturally cool, humidity-stable cellars for the secondary fermentation and ageing of sparkling wines. Louis de Grenelle operates its own cave system and produces a range of traditionally made sparklers based on Chenin Blanc, with Chardonnay and Cabernet Franc permitted for blending in Crémant. Saumur Mousseux uses Chenin Blanc as its primary variety and may be vinified brut or demi-sec.
