"Bodegas Alvear was founded in 1729 in Montilla, in the Montilla-Moriles DO of Córdoba province in Andalucía. Alvear is the oldest continuously-operating winery in Spain and is run by the Alvear family today. The bodega's headline is its Pedro Ximénez sweet wine, made from sun-dried PX grapes laid out on esparto mats to concentrate sugars before pressing — a method documented since the seventeenth century.
