Single vineyard Pinot Gris sourced from the cool-climate Eden Valley, blended with a freshener component from Williamstown in the southern Barossa to add extra richness and punch. Grapes are harvested at night to keep them cool, then gently pressed. After cold settling, the clear juice is racked to cooled stainless steel fermentation tanks and inoculated with selected yeasts for a cool, clean fermentation. Minimal handling and filtration prior to bottling. Pale straw with just a hint of varietal blush. Poached pears and frangipane tart on the nose with accents of citrus zest. Soft and juicy on the palate with nashi pear, lime juice and blanched almonds on a textural, rounded palate balanced by refreshing acidity.
