St. Petroni is a craft Galician vermouth made by Vermutería de Galicia in Padrón, in north-western Spain, founded in 2014 by managing director Cristina Codesido. Unlike most vermouth — built on neutral white wine of indeterminate origin — St. Petroni uses Albariño from vineyards near the Pazo Arretén in Rías Baixas country, fermented and vinified on its lees, then aromatised with 29 herbs and botanicals. Pernod Ricard España added the brand to its distribution portfolio in 2020.

Galicia (Padrón)

St. Petroni was founded in 2014 in Padrón, in the Galicia region of Spain, by Cristina Codesido at Vermutería de Galicia. The house took an unusual approach to vermouth construction: rather than starting from neutral white wine — the standard Italian and French model — St. Petroni uses Albariño from vineyards near the Pazo Arretén and Pazo Arretén Palace in Galicia's Rías Baixas designation. The Albariño is fermented and lee-aged, then fortified and aromatised with twenty-nine selected herbs and botanicals, giving the finished vermouth a more pronounced wine character than the Italian tradition.

Pernod Ricard España added St. Petroni to its distribution portfolio in 2020, expanding the brand's reach beyond the Spanish specialty trade. The line currently covers a Vermu Vermello (red, 15%) and Vermu Branco (white, 15%) at 1L, the size that suits Spanish on-premise vermouth-on-tap service.
