What it tastes like.

Definition: In EEC terms, Quality Liquor Wine Produced in a Specific Region, (VLCPRD, CE R1493/99); in Spain, fortified wine with the Quality Demarcation Sherry, biologically aged under a layer of yeast.

Type of grape: Palomino.

Vineyards: Jerez Superior. Pago AΓ’β‚¬β€œina y Carrascal.

Alcohol content: 15% Alc/vol.

Sugar content: Very dry, less than 1 gr. /l

Production: Bud musts from our best vineyards. Cold, still decanting, fermentation at 22c. Early filtering, classified by quality and fortified at 15ΒΌ with the best distilled wines sent to the traditional racks. Put into the classical Jerez Criaderas y Soleras system of dynamic ageing in the 9th criadera, where the biological ageing takes place under a layer of yeast. Traditional oak casks, preferably American, with a capacity of 30 and 36. Aged for at least 8 years, passing through the different criaderas until it reaches the solera, from which it is drawn out for consumption. Fino sherry, very mature, naturally pungent in the amontillado style.

Tasting notes:Β Brilliant hues of old gold. Sharply intense and complex aromas reminiscent of the yeast layer, with a note of almond. Very dry on the palate, with a perfect level of acidity. Full-bodied, assertive and elegant with a lingering finish. An extremely expressive and unforgettable wine.

Suggestions for consumption:Β Ideal as an aperitif with cheese, ham and seafood.
