Chikumanishiki Sake Brewery has been crafting sake since 1681 in the high-mountain region of Saku, Nagano Prefecture, in the shadow of Mt. Asama and Mt. Yatsugatake. Naturally cold winters, the pellucid subterranean water of Mt. Asama, and locally grown Miyama Nishiki and Yamada Nishiki rice combine to produce sake of layered structure and a touch of sweetness.
