St Raphaël was developed in 1830 by Doctor Juppet, who built the recipe around quinquina — the bark of cinchona trees, used historically for its tonic and antimalarial properties — alongside cocoa, bitter orange, vanilla and Colombo root. The base is mistelle, made by fortifying grape juice with alcohol partway through fermentation to preserve natural sugars (the same principle that produces Pommeau, Pineau des Charentes and Floc de Gascogne).
