100% Chardonnay from estate vines aged 40-70 years in the communes of Beine, Courgis and Chablis, planted at a low density of 5,800 vines per hectare in classic Kimmeridgian limestone and clay soils. Whole-bunch pressed to tank, cool-fermented with indigenous yeast, full malolactic conversion completed with indigenous bacteria, then matured on fine lees in tank for 4 months before bottling. The nose is pure and precise — crisp green apple, citrus zest, white flower and a streak of gunflint minerality. The palate is light to medium-bodied with vibrant acidity, a subtle creamy lees texture and a clean, stony finish typical of great village Chablis.
