The rum is first aged in oak in the Caribbean (sourced from Barbados and Guyana distilleries), then shipped to Jerez where it receives a second ageing in casks that previously held Williams & Humbert's Pedro Ximénez sherry. Dos Maderas - "Two Woods" - is the Williams & Humbert house's rum project, run out of the Bodegas Williams & Humbert solera cellars in Jerez. Williams & Humbert is one of the major sherry houses; the Dos Maderas concept takes Caribbean rum (sourced from Barbados and Guyana) and ages it twice. First the standard tropical ageing in the Caribbean origin, then a second ageing in Andalucia using ex-sherry casks from the Williams & Humbert cellars themselves. The brand launched in 2006; Williams & Humbert dates to 1877 and has been Medina-family-owned since 1979.

The numbers in each name spell out the wood programme. The 5J is 5 years tropical plus 3 years Spain. The PX is 5 plus 5, the second ageing in Pedro Ximenez sherry casks - heavily sweet, raisined, dark. The Seleccion Luxus runs the full programme: 5 years Caribbean, then 5 years in oloroso, then 3 years in PX, then 2 final years in Don Guido VORS PX casks.
