The defining step: between the first and second distillation, the spirit is infused with toasted corn (elote) grown on the family farm. Corn and agave are the two staples of Oaxacan agriculture — this mezcal embeds both.\u003c\/p\u003e\u003cp\u003eRoasted corn, sweet smoke, soft fruit, toasted nuts and gentle pepper. The palate is rounded and slightly thicker than the standard Espadín, with the corn infusion adding depth without sweetness.
