Founded by Jean-Paul Metté and now run by Timothée and Nathalie Traber, the maison produces 88+ expressions of fruit and berry eaux-de-vie — distilled by hand from local Alsatian fruit picked at peak ripeness, fermented without added sugar or yeast, and double-distilled in 100L Charentais-style copper pot stills. After distillation each spirit rests in stainless-steel vats in an outdoor courtyard for a minimum of one year so unwanted esters can blow off and the spirit can settle. Bottled by hand to order.
